- 16 oz. frozen peas, microwaved (follow package instructions)
- 1 lemon, juiced and zested
- 1 garlic clove, minced
- 1/4 c fresh herb or 2 T of dried herb (I used dried dill in the photo above)
- 1 glug of oil
- 1 T nutritional yeast, optional
- salt, to taste
Blitz all ingredients together in a food processor and spread it thick on a slice of toast or swirl through some pasta (or really however you like to use your pesto)
With such a simple recipe, you may be asking if there's more to this. Nope! Ok, maybe a little...
I would like to expand more on the herb part because some work better than others here. I have had the best results with most fresh herbs like dill, parsley, and basil. The dried herbs that have worked best are dill, thyme, and oregano. I have tried dried parsley and cilantro but those variations didn't have enough flavor for me. I have found the least success with "hard" herbs (like rosemary, bay, and sage) because they were too powerful in flavor and their texture did not blend well into this recipe.
I haven't yet tried mixing herbs in this recipe, but I don't see why it wouldn't work!
My favorite part about this recipe is that it tastes great hot or cold so its an easy addition to a weekly meal prep.
